White agave

A large Agave that forms a stunning rosette, to 4 m (13 ft.) wide, with huge, bluish-gray green leaves with attractive reddish thorns. It is one of the largest Agave, native to Oaxaca, Mexico, but known only from cultivation, not from the wild. It does best in a warm temperate climate, where it needs ample room and will appreciate plenty of water in summer. Agave atrovirens is fermented into pulque and roasted and distilled to make mezcal.

A small to medium-sized agave from high altitude in the Mexican states of Chihuahua, Durango and Zacatecas, where it grows between 1400 and 2200 m (4500 and 7500 ft.) elevation in open oak or pine woodland. It forms a compact rosette of very beautiful, broad, blue grey leaves.
